"pax" is a 3rd declension noun in the nominative - peace: Pax Invictus (“Peace to the Unconquered”),
"invictus" is in the nominative not the dative and is an adjective
better translation would be "unconquered peace"

oops my bad.....i thought it ended in "-US' as per my post up there....: Pax Invictus (“Peace to the Unconquered”),
after i clicked the link to purchase the book i saw it ended in -IS instead
therefore indeed making it the dative form.

also note that the "invictis" is used in the title in the plural form of the dative (and also the ablative form)....so would refer to "peace to the unconquered (plural) ones....
not just to Cardinal Pell.
